I vote the latter.It's rare that every player in a party is interested in psionics. Most of the psionics adventures that I've read contain both psionic and non-psionic foes.

Unless your campaign is particularly psionic, I vote for adventures that involve psionics, even with a psionic BBEG. "Never punish creativity."
